Guest Nivo Dining

A breakfast garden room, a black-glass bar, a supper club beneath silvered stars and a lounge beside the gaming floor, all supplied by one kitchen preparing every dish to order.

The kitchen

Four rooms from one kitchen

Beneath the lobby, our executive chef directs a thirty-two-cook brigade from one kitchen. The same hands prepare breakfast croissants, ballroom canapes and late plates for the Gold Room Lounge. Seasonal menus draw on classic methods, with proper-stock sauces, bone-roasted meat and pastry hand-laminated each morning.

Whenever possible, we source from farms, dairies and fishing boats no more than a day's drive away, and our wine list highlights small family estates. Allergies and dietary preferences can be accommodated in every room, and for younger guests the kitchen gladly prepares a simple dish not listed on the menu.

Supper club

Celeste

In the evening, Celeste becomes the hotel's heart. Its dining room lies under a midnight-blue domed ceiling scattered with silvered stars, while tables fan around a small stage where a pianist performs throughout dinner. White-jacketed waiters carve, flame and finish several dishes tableside, as has always been the custom here.

Our concise menu follows the seasons. It includes oysters, soup of the day, fish prepared on the bone, steak Diane, a thoughtfully considered vegetable course, and a dessert trolley that has tempted guests across the room.

Cocktail bar

The Mirror Bar

The Mirror Bar takes its name from the beveled mirrors along its walls. This long, low room combines black glass, brass rails and leather stools. Bartenders prepare forty classic cocktails alongside a small selection of house creations, each stirred or shaken to order in vintage coupes.

From 7 pm, a resident pianist performs, while a jazz trio appears on the corner stage on Wednesday and Sunday evenings. Until 1 am, a concise bar menu offers oysters, toasted sandwiches and salted almonds.

  • The Lantern, smoked cinnamon stick with aged rum, honey and lemon
  • Gilded Fan, grapefruit twist, gin, elderflower and sparkling wine
  • Midnight Parade, rye, sweet vermouth, cherry and orange bitters
  • Quiet Hour, alcohol-free chamomile, pear, ginger, and soda

The Palm Court

Tall palms and white orchids fill this garden room beneath a glass roof. From 7 am to 11 am, breakfast includes warm pastries, eggs made to order, smoked fish and seasonal fruit. Afternoon tea begins at 2 pm, bringing finger sandwiches, warm scones and small cakes on a tiered stand.

The Lounge at the Gold Room

Next to the gaming floor, this lounge offers small plates, hot drinks and nightcaps between noon and 1 am. Choose beef sliders, crisp potatoes seasoned with truffle salt, or warm chocolate cookies, fresh from the oven each night at midnight.
